Quinoa Corn Edamame Salad

Healthy quinoa black bean salad with mango and avocado. Perfect for spring, summer, fall or winter. Gray stone background.

Ingredients

  • 2 cups frozen shelled edamame
  • 1 cup frozen corn
  • 2 cups cooked quinoa
  • 3 green onions- sliced
  • 1 red bell pepper
  • handful chopped cilantro
  • cherry tomatoes- slice in half
  • baby spinach/ kale- chopped

Dressing

  • 1 T. olive oil (optional)
  • 1 T. fresh lemon juice
  • 1 T. fresh lime juice
  • ¼ tsp salt, chili powder, dried thyme, black pepper
  • dash of cayenne (optional)

 

Directions

  • Briefly boil edamame and corn until tender; drain and cool.
  • In a bowl combine- edamame, corn, quinoa, green onion, red pepper, cilantro.
  • In a small bowl combine all dressing ingredients; drizzle over salad.
