Quinoa Corn Edamame Salad
Ingredients
- 2 cups frozen shelled edamame
- 1 cup frozen corn
- 2 cups cooked quinoa
- 3 green onions- sliced
- 1 red bell pepper
- handful chopped cilantro
- cherry tomatoes- slice in half
- baby spinach/ kale- chopped
 
Dressing
- 1 T. olive oil (optional)
- 1 T. fresh lemon juice
- 1 T. fresh lime juice
- ¼ tsp salt, chili powder, dried thyme, black pepper
- dash of cayenne (optional)
Directions
- Briefly boil edamame and corn until tender; drain and cool.
- In a bowl combine- edamame, corn, quinoa, green onion, red pepper, cilantro.
- In a small bowl combine all dressing ingredients; drizzle over salad.
