Portobello Fajitas
Ingredients
- 3 large portobello mushrooms, sliced thick
- 2 bell pepper, sliced in strips
- 1 onion, sliced in strips
- 1 Tablespoon taco seasoning (see below)
- ½ lime, juiced
- 1 tablespoon olive oil (optional)
- Toppings of choice: guacamole, pico de gallo
Taco Seasoning (combine all ingredients – makes about 3 T.)
- 1 Tablespoon chili powder
- 1 ½ tsp cumin
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp cayenne pepper
Directions
- In a large skillet over medium heat, add 1 T. olive oil and peppers and onions. Cook about 2 minutes
- Add mushrooms and 1 Tablespoon taco seasoning
- Stir occasionally, cook 7-8 minutes
- Add juice of ½ lime
- Serve with rice, guacamole, pico de gallo, tortillas
