Portobello Fajitas

Ingredients

  • 3 large portobello mushrooms, sliced thick
  • 2 bell pepper, sliced in strips
  • 1 onion, sliced in strips
  • 1 Tablespoon taco seasoning (see below)
  • ½ lime, juiced
  • 1 tablespoon olive oil (optional)
  • Toppings of choice: guacamole, pico de gallo

 

Taco Seasoning

(combine all ingredients – makes about 3 T.)

  • 1 Tablespoon chili powder
  • 1 ½ tsp cumin
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp cayenne pepper

 

Directions

  • In a large skillet over medium heat, add 1 T. olive oil and peppers and onions. Cook about 2 minutes.
  • Add mushrooms and 1 Tablespoon taco seasoning.
  • Stir occasionally, cook 7-8 minutes.
  • Add juice of ½ lime.
  • Serve with rice, guacamole, pico de gallo, tortillas.
