Creamy Broccoli and Cauliflower Soup
Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 head broccoli, chopped
- 1 head cauliflower, chopped
- 2 potatoes, diced
- ¼ cup pastry flour
- 4 cups vegetable broth
- 1 cup unsweetened, unflavored almond milk
- 1/3 cup nutritional yeast
- salt
- black pepper
- ½ lemon, juiced
- 2 big handfuls of spinach
Directions
- Sauté onions for 5 minutes.
- Add garlic and cook for another minute.
- Add carrots, broccoli, cauliflower, and potatoes and sauté for 3-5 minutes.
- Add flour and stir well to combine.
- Add broth, milk, nutritional yeast.
- Bring to a boil and then reduce heat to low and simmer, covered, for 20 minutes.
- Stir in lemon juice and spinach.
- Add salt and pepper to taste.
- Use an immersion blender to blend half the soup, leaving some chunky for texture.
