Creamy Broccoli and Cauliflower Soup

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 head broccoli, chopped
  • 1 head cauliflower, chopped
  • 2 potatoes, diced
  • ¼ cup pastry flour
  • 4 cups vegetable broth
  • 1 cup unsweetened, unflavored almond milk
  • 1/3 cup nutritional yeast
  • salt
  • black pepper
  • ½ lemon, juiced
  • 2 big handfuls of spinach

Directions

  • Sauté onions for 5 minutes.
  • Add garlic and cook for another minute.
  • Add carrots, broccoli, cauliflower, and potatoes and sauté for 3-5 minutes.
  • Add flour and stir well to combine.
  • Add broth, milk, nutritional yeast.
  • Bring to a boil and then reduce heat to low and simmer, covered, for 20 minutes.
  • Stir in lemon juice and spinach.
  • Add salt and pepper to taste.
  • Use an immersion blender to blend half the soup, leaving some chunky for texture.
