
Mexican Quinoa Stuffed Peppers
Ingredients- 5 large bell peppers- slice in half (9 halves will be for stuffing, and 1 half chopped up)
- 2 cups cooked quinoa
- 1 can black beans – rinse and drain
- 1 can corn (or frozen) – drain
- 3 green onions- sliced
- 2/3 cup chunky salsa
- 2 T. nutritional yeast
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- salt, pepper, red pepper flakes, cayenne pepper etc (any other seasonings you want)
- chopped cilantro (handful)
- 1 jalapeno (optional)
- Preheat oven 350 F
- Throw everything in bowl and mix- except the 9 halves that you are stuffing
- Place pepper halves in 9 x 13 pan (I do 3 rows of 3)
- Stuff with the mixture
- Cover with foil and bake 35 minutes; remove foil and bake 10 min more
- Serve with guac on top!!
