Mexican Quinoa Stuffed Peppers

  Ingredients  
  • 5 large bell peppers- slice in half (9 halves will be for stuffing, and 1 half chopped up)
 
  • 2 cups cooked quinoa
  • 1 can black beans – rinse and drain
  • 1 can corn (or frozen) – drain
  • 3 green onions- sliced
  • 2/3 cup chunky salsa
  • 2 T. nutritional yeast
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • salt, pepper, red pepper flakes, cayenne pepper etc (any other seasonings you want)
  • chopped cilantro (handful)
  • 1 jalapeno (optional)
  Directions
  • Preheat oven 350 F
  • Throw everything in bowl and mix- except the 9 halves that you are stuffing
  • Place pepper halves in 9 x 13 pan (I do 3 rows of 3)
  • Stuff with the mixture
  • Cover with foil and bake 35 minutes; remove foil and bake 10 min more
  • Serve with guac on top!!
  Guacamole
  • 3-4 avocados- smashed
  • ½ red onion- chopped
  • tomatoes
  • cilantro
  • jalapeno
  • salt and pepper
lime- squeezed
