Coconut Red Lentil Dal

Ingredients

  • 2 onions, chopped
  • 4 garlic cloves, chopped
  • 4 tomatoes, chopped
  • 1 teaspoon ginger powder
  • Seasoning (1 tsp each)
  • 1 tsp each: Cumin, turmeric, curry powder, smoke paprika
  • ½ tsp each: cayenne pepper, salt, pepper
  • 1 ½ cups red lentil (rinsed)
  • 1 can coconut milk
  • 2 cups water
  • Vegetables (any that you want): cauliflower, sweet potatoes, green beans, peas, broccoli, etc

Directions

  • Sauté onions and garlic
  • Add chopped tomatoes and ginger powder
  • Add all seasonings, stir everything and cook for a few minutes
  • Add lentils, coconut milk, water, and vegetables
  • Simmer for 30 minutes
  • Add several handfuls of spinach, kale, and a little lemon juice
