Coconut Red Lentil Dal

Ingredients
- 2 onions, chopped
- 4 garlic cloves, chopped
- 4 tomatoes, chopped
- 1 teaspoon ginger powder
- Seasoning (1 tsp each)
- 1 tsp each: Cumin, turmeric, curry powder, smoke paprika
- ½ tsp each: cayenne pepper, salt, pepper
- 1 ½ cups red lentil (rinsed)
- 1 can coconut milk
- 2 cups water
- Vegetables (any that you want): cauliflower, sweet potatoes, green beans, peas, broccoli, etc
Directions
- Sauté onions and garlic
- Add chopped tomatoes and ginger powder
- Add all seasonings, stir everything and cook for a few minutes
- Add lentils, coconut milk, water, and vegetables
- Simmer for 30 minutes
- Add several handfuls of spinach, kale, and a little lemon juice
