Asian Stir-Fry
Ingredients
- 1 onion- thinly sliced
- 4-5 garlic- minced
- 2 small heads bok choy – cut in quarters lengthwise
- 1 red bell pepper- sliced
- 1 orange bell pepper- sliced
- 1 carrot- julienned
- 2 cups snow peas
- 1 package broccolini
- 2 packages king oyster mushrooms- sliced
- cilantro
Peanut Sauce– put everything in blender and blend
- ½ cup peanut butter
- ¼ c. tamari (GF soy sauce)
- 2 T. rice vinegar
- 2 T. sesame oil
- 1 T. sriracha (optional)
- 1 T. maple syrup
Instructions
- In one pan- sauté king oyster mushrooms
- In 2nd pan- Sauté onions & garlic for a few minutes; Add in bok choy, bell peppers, carrots, broccolini, snow peas; Add a few splashes water and cover with lid for 5-10 min until cooked
- Add in the sautéed oyster mushrooms and cilantro
- Pour in the peanut sauce
- Serve over rice or pasta
